

Red Sauce Spaghetti

Saucy with a little spice if you like. This recipe uses Dove's Farm brown rice spaghetti. That's spaghetti made from brown rice flour so it's totally gluten free. Maybe because I've been eating it for so long now I just don't recognise the difference at all in fact, I love it a little more!

Gluten free, guilt free, dairy free and vegan. The mushrooms and chickpeas add a little protein to the brown rice spaghetti and its sauciness will have you drooling for more, enjoy!

Ingredients
Time: 30mins

For the pasta:

For the sauce:

1 tbsp of extra virgin olive oil
-
2 x garlic cloves peeled and sliced
-
8 x brown button mushrooms sliced
-
1 x can of Italian plum tomatoes (these are my favourite, organic and grown in Puglia)

150g of soaked chickpeas
-
1 x fresh birds eye chilli chopped (optional)

1/2 a lemon, squeezed
-
sea or Himalayan salt to taste
-
¼ teaspoon ground black pepper
-
â…› teaspoon turmeric

10 fresh basil leaves

Directions​​

Start with the sauce. Add the olive oil into a pot on medium heat with the garlic and sliced mushrooms allowing to cook for around 5 minutes whilst stirring occasionally.

Add the can of plum tomatoes and start to break them up a little with a wooden spoon. Don't worry the more they cook the more they will break apart and become a sauce. Keep the heat on medium-low and allow to simmer for 10 minutes.

Add in the chickpeas, chilli, lemon, salt, pepper and a dash of turmeric. Keep stirring. Allow to simmer for a further 15 minutes on low heat.

Whilst the sauce is simmering prepare a large pot of hot water with a tsp of sea salt. Place it on high heat and bring it to the boil. throw in the pasta and cook according to instructions. I boil the brown rice spaghetti for no longer than 7 minutes. Drain the pasta but reserve a 1/4 cup of the pasta water and throw it in the sauce.

Tear a few fresh basil leaves and add them in there.

When the sauce is ready and has been cooking for around 30 mins add in the spaghetti mix it all together and serve.
