

Lasun Chutney / Gujarati Garlic Chutney

Inspired by my boyfriend's mother. Lasun chutney / garlic chutney is made from fresh garlic, dry coconut, ground sesame seeds, cumin and chilli powder. It is used for cooking in many Indian (especially Maharashtra, Gujarat, Punjab, Rajasthan and northern Karnataka) and Pakistani homes. Cooking with it can transform the flavour of any dish but using it as a condiment will make you want to eat it with everything!

Garlic is an incredible healer. It works as a triple threat against infections, offering antibacterial, antiviral and antifungal properties. Not only is it effective at killing antibiotic-resistant bacteria, including MRSA, but it also fights yeast infections, viruses and parasites. Garlic can also help to lower LDL cholesterol and prevent atherosclerosis, reducing your risk of heart disease and stroke.

Ingredients
Time: 15 minutes
Serves: many - can keep in fridge for weeks

1 cup of dry coconut chips

1/4 cup of sesame seeds
-
2 tbsp of cumin powder
-
1 tbsp coriander powder - optional
-
2 cups of fresh peeled garlic
-
1/2 cup of red chilli powder
-
1/2 tbsp sea / himalayan salt

Directions​

Dry roast the coconut chips, sesame seeds and cumin powder in a pan on medium heat for 2 minutes or until they are starting to go a little golden.

Place in a blender or vitamix and blend.

Add the raw fresh garlic peeled and blend again.

Next add the chilli powder and salt and blend for the final time until all the ingredients are mixed well together.

Transfer into a clean jar and keep it in the fridge for weeks (if you don't finish it all before then!)

Enjoy it as a condiment with your favourite dishes or add it to your cooking for a fiery, tasty kick.
