Three Ingredients! I still can't believe this recipe only uses 3 ingredients. All natural, whole, gluten free & vegan. Great for anyone trying to enjoy pancake day a little guilt free! This recipe uses Dove's Farm Wholemeal gluten free flour made up of rice flour, potato, tapioca flour & xanthan gum, however you can use alternatives like chickpea flour (commonly used in Indian cuisine), or oat flour (place oats in a high speed processor to make like flour. Enjoy these deliciously fluffy warm pancakes with a drizzle of maple syrup, almond butter and berry compote or fresh berries.
Pure maple syrup is much different than products labelled as “breakfast” or “pancake” syrups. These common syrups are made from high-fructose corn syrup and flavouring – nothing in terms of quality and taste when compared to actual maple syrup. Pure maple syrup is derived from the sap of maple trees. After extracted from the tree, the sap is boiled to increase the sweetness and to create a thicker syrup. Unlike non nutritive sweeteners, maple syrup has a few benefits. First of all it has a Glycemic Load of 54 (sugar has a GL of 65, and honey 58). It is also rich in antioxidants and anti-inflammatories, it contains a little bit of zinc and manganese too. Enjoyed sparingly and with the combination of fibre or nuts to slow sugar release. However these treats should be enjoyed on one off occasions, and our focus should always remain on good whole plant based foods, organic fruits, vegetables, wild and free range fish and/or meat if we eat it.

Ingredients:
For the pancakes:

1 and 1/2 cups of Dove's Wholemeal Gluten Free flour or Oat Flour or Chickpea Flour (see tips below)

1 cup of plant milk of your choice (I like to use Rude Health or home made, many store bought plant milks use additives and sweeteners)

1 x ripe banana mashed or a chia egg (1 tbsp chia seeds mixed with 1/3 cup of water, this acts as an egg replacement, helpign to bind ingredients together.

a drizzle of coconut oil for frying

Toppings:

Almond butter
-
Berry compote - frozen berries heated with a little water and maple syrup

Maple Syrup

Coconut Yoghurt
-
Cinnamon

Fresh Berries

Directions​​

Place all ingredients for pancakes into mixing bowl and beat together using a fork or a whisk, mixing until smooth and no lumps.

Place a frying pan on medium to low heat and place half a teaspoon of coconut oil.

Using a ladle, ladle in some batter. To 'round' your pancakes use the back of the ladle or a tablespoon and round it making circular motions, smoothing it in the pan to make a circle.

The pancake is ready to turn over when bubbles start to appear on the top. Turn the pancake over using a spatula.

When the pancake has cooked through, remove from pan, place on plate and repeat step 3 and 4 until all your batter is used!

Drizzle with toppings listed above and enjoy! Guilt free!

Tips: if using oat flour, ground the oats with a high powered food processor or blender (such as a vitamix) and this will turn it into a flour like consistency.
